Il miele, chi é costui? Buonissimo, lo adoro in tutte le sue forme, nel dolce, nel salato, ottimo antibatterico, va bene per escoriazioni, per il mal di gola…ce le ha tutte lui! Ma che ha dentro? Da che cosa é composto il miele? Io quando mangio o uso qualcosa, mi piace capirne sempre di piú e mi sono posta questa domanda…bello e buono, ma in cosa consiste la composizione del miele?

Da cosa é composto il miele?

Lo so, ti stupiró con effetti speciali: il miele é costituito fondamentalmente da acqua e zucchero. Ma perché non é liquido? O meglio, non rimane liquido per sempre come appena smielato? Semplice, perché il miele é una soluzione sovrasatura, cosa significa? Ció significa che, quando liquido, contiene piú zuccheri disciolti in una certa quantitá di acqua rispetto a quelli che l’acqua sarebbe in grado di assimilare in condizioni normali. Un esempio da parte di un’esperta del settore, la dott.ssa Lucia Piana: se seguendo una ricetta metti 80 g di zucchero in 17 g di acqua, questi non si sciolgono. Qualcosa di simile avviene con il miele quando non si trova nelle ‘speciali condizioni dell’alveare’.

Difatti, andando piú nel particolare, il miele é composto per circa l’ 80% da zuccheri e da un 17% di acqua. La piccolissima percentuale restante é costituita da minerali, aminoacidi e acidi. Insomma, tutte quelle sostanze che gli danno un certo aroma e determinate proprietá.

Facile no? Il miele é composto principalmente da zuccheri! Nello specifico, da due zuccheri monosaccaridi, quindi semplici, ovvero da fruttosio e glucosio. Ma sai una cosa, il miele non é solo ed esclusivamente dolce! Puó essere molto di piú: infatti il miele ha un aroma e questo dipende da tutte quelle sostanze secondarie di cui é composto, che seppur in quantitá minime sono veramente importanti.

Tra i mieli da gusto e aroma piú deciso ne troviamo di chiari come quello di tiglio, arancio e rosmarino, e piú scuri e aromatici come quello di erica o eucalipto.

Ricordati, che se la prima cosa che ti viene in mente nel pensare al miele é la sua dolcezza, ci sono anche mieli piú amari o acidi. Un esempio di miele meno dolce? Il miele di melata!

Il miele di melata??

Questo ha un’origine davvero particolare: se le api sono golose di nettare e della sua dolcezza, ci sono altri insetti come afidi, farfalle, parassiti a cui non gliene puó fregar di meno e una volta succhiato l’azoto della linfa delle piante, tutto il resto lo lasciano lí sulla pianta, sotto forma di sostanza appiccicosa. Ecco, il miele di melata viene proprio da lí, le api non si lasciano sfuggire quella sostanza e da lí ne deriva questo miele davvero speciale!

Dicevi mieli amari…davvero?!

Nemmeno io l’avrei mai immaginato, ma durante il percorso sensoriale che ho ultimato giusto un paio di settimane fa (te ne parleró piú approfonditamente un giorno se ti va), ho avuto occasione di assaggiare dei mieli amari. É stato abbastanza traumatizzante, ma provare per credere! Quello di castagno, per non parlare di quello di erica arborea poi…vi posso assicurare che esistono! É davvero un mondo affascinante quello del miele, non fermarti a quelli tristi del supermercato…c’é dietro molto di piú! E soprattutto per tutti i gusti 🙂

E per quanto riguarda il profumo?

Ecco, considera che non sempre il miele avrá il profumo del suo fiore. Ad esempio; per la lavanda e gli agrumi sará piú facile trovare una corrispondenza tra il miele e i suoi fiori. Per altri, come il rosmarino ad esempio, abbiamo in mente il forte profumo del rosmarino, tuttavia, non centra niente con quello del miele. Questo perché? Come spiegato da Lucia Piana nel libro il mondo delle api e del miele*, la maggior parte degli oli essenziali di una certa pianta e quindi il profumo che vi associamo, sono contenuti nei petali, e non nel nettare bottinato dalle api.
