Honig… Was ist das? Ich liebe Honig in jeder Form, egal ob süß oder herzhaft. Super lecker, mit außergewöhnlichen Antibakteriellen Eigenschaften, hilfreich bei Schürfwunden und auch bei Halsschmerzen… Honig hilft immer! Aber was ist drin? Woraus besteht Honig? Wenn ich etwas esse oder benutze, weiß ich immer gern etwas mehr und ich habe mich gefragt: „Es ist soooo gut… doch woraus besteht es?“.

Lies weiter und wir werden es zusammen herausfinden!

Woraus besteht Honig?

Ich weiß, ich weiß, ich werde euch nun überraschen: Honig besteht hauptsächlich nur aus Zucker und Wasser! Warum er dann nicht flüssig? Oder anders gefragt, warum bleibt er nicht so flüssig wie kurz nach der Ernte? Das kommt daher das Honig eine übersättigte Lösung ist… was das bedeutet? Nun… es heißt dass mehr Zucker in der Menge Wasser gelöst ist, als das Wasser unter normalen Umständen aufnehmen könnte. Wenn du zum Beispiel einem Rezept folgst in dem du 80g Zucker mit 17g Wasser verbinden sollst, wirst du feststellen das sich der Zucker nicht im Wasser auflöst. So ähnlich ist das mit dem Honig. Ohne die Bedingungen wie in einer Bienenbeute wird der Honig wieder fest.

Und wirklich, näher betrachtet besteht Honig aus ca. 80% Zucker und ca. 17% Wasser. Die verbleibenden Prozente verteilen sich auf verschiedene Mineralien, Aminosäuren und Säuren. Diese Substanzen sind es, welche dem Honig sein spezielles Aroma und die besonderen Eigenschaften verleihen.

Es ist einfach, nicht wahr? Honig besteht hauptsächlich aus verschiedenen Zuckern! Im speziellen aus 2 Monozuckern (einfache Zucker), Fruktose und Glukose. Es mag seltsam Klingen doch trotz alledem ist Honig nicht nur süß! Er kann so viel mehr, wirklich. Durch die zusätzlichen Inhalte hat jeder Honig ein eigenes Aroma. Trotz der im Verhältnis geringen Anzahl sind sie sehr wichtig.

Unter den Honigen mit einem stärkeren Aroma und intensiverem Geschmack finden wir zum Beispiel: Linden-, Orangen- und Rosmarinhonig mit hellerer Farbe, aber auch dunklere und würzigere Honige wie Eukalyptus- und Heidehonige.

Wenn die Süße das Erste ist woran dich Honig erinnert, solltest du wissen das es auch bittere und sogar saure Honige gibt. Ein Beispiel für weniger süßen Honig? Honig aus Honigtau!

Honigtau??

Die Entstehung dieses Honigs ist ein wenig spezieller. Während Bienen gierig Nektar und andere süße Erzeugnisse sammeln, gibt es Insekten welche sich nicht so sehr dafür interessieren (zum Beispiel Blattläuse, Schmetterlinge und andere…). Sie ernähren sich vom Pflanzensaft und lassen die süßeren Reste auf den Blättern zurück. Und unsere Freunde die Bienen, können nicht anders als sich in die Süße und etwas klebrige Substanz auf den Blättern zu verlieben. Sie bringen diese Substanz in die Bienenbeute und erzeugen daraus diesen sehr speziellen Honig.

Du hast bitteren Honig erwähnt… ernsthaft??

Ich hätte es selbst nie für möglich gehalten, aber während eines Honig-Geschmacks-Kurses, welchen ich vor ein paar Wochen beendet habe(darüber werde ich später noch einmal berichten sollte es dich interessieren), hatte ich die Gelegenheit auch einen bitteren Honig zu kosten. Es war wie ein Trauma für mich, versuch es zu glauben! Kastanienhonig und im besonderen Baumheidenhonig… ich versichere dir das sie existieren! Die Welt des Honigs wird dich verzaubern, halte dich nicht mit der traurigen Auswahl in den Supermärkten auf… es gibt noch so viel mehr! Und für jeden Geschmack! 😉

Und der Geruch?

Zum Geruch muss ich schon vorab eine Sache klar stellen: der Honig wird nicht immer wie die Pflanze von der die Bienen sammelten riechen. Zum Beispiel ist es leicht die Verbindung zwischen Lavendel- und Zitronenhonig und deren Pflanzen herzustellen. Für andere gilt dies nicht, Rosmarinhonig, Ihr würdet sicher den intensiven Duft dieses Gewürzes erwarten und doch riecht der Honig komplett anders. Warum das so ist? Weil viele Pflanzen aufgrund ihrer Öle duften. Diese befinden sich in den Blättern der Pflanzen und nicht in ihrem Nektar, welcher von den Bienen gesammelt wird.
