Aus dem Alten Ägypten, ca. 300 v. Chr.

Wir haben uns entschlossen den Monat Juni mit einem unserer liebsten Produkte zu beginnen: Honig! Einerseits weil die Hing Saison nun endlich begonnen hat doch auch weil der Besuch bei meinen italienischen Freunden und Verwandten uns so sehr versüßt hat das ich nicht anders Kann als über Honig zu sprechen. Und weißt du was? Dieses Thema wird uns noch eine Weile begleiten. Einfach deswegen weil er gut ist, gesund ist, wir ihn lieben (und unsere Bienen auch!) und unser Herz vor Freude fast zerspringt wenn wir darüber sprechen!

Bevor ich nähere Bekanntschaft mit dem Imkeruniversum machte, hätte ich mir nie vorstellen können das es so viele zauberhafte Dinge über Honig zu wissen gibt. Ich lernte viel von Basti und Opa Heinz, ich habe einige Bücher gelesen und ich habe an Kursen über Honig teilgenommen (Ja, es gibt sogar Kurse über Honig!). Stell dir vor wie viel es darüber zu lernen gibt. Deswegen habe ich beschlossen dieses Wissen mit euch zu teilen… weil gute Dinge sind zum teilen da (eines unserer Mottos 🙂 ).

C´mon, gib zu: jetzt bist du ein wenig neugierig, nicht wahr? Sei bereit in ganz viel Honig einzutauchen. 🙂

Es ist so gut… aber was ist drin?

In unserem Artikel Honig Zusammensetzung: Woraus besteht Honig? – Gaeblini sind wir mehr in die Tiefe gegangen, größtenteils besteht Honig aus verschiedenen Zuckern und Wasser. Wenn es um Zucker geht sprechen wir hier hauptsächlich von Fructose und Glukose. Aber besteht Honig nur aus Wasser und Zucker? Natürlich nicht, er enthält noch so viel mehr (Säuren, Aminosäuren, Mineralien, Mikropartikel von Pollen,…) was dem Honig das gewisse extra gibt und ihn so einzigartig, gut und gesund macht! Eine weitere Besonderheit ist das Honig fest wird, er kristallisiert! Lass uns den Mythos des flüssigen Honigs entlarven. Alle Honige kristallisieren früher oder später. Dies ist ein natürlicher Prozess und das kann nicht verhindert werden (außer man behandelt den Honig auf bestimmte Arten wodurch aber einige der gesunden Eigenschaften und speziellen Merkmale verloren gehen.

Also, im Grunde besteht er hauprsächlich aus Zucker… sind Zucker und Honig dann das gleiche?

Mmm nein, absolut nicht! Abgesehen von den gesünderen Eigenschaften, sprechen wir hier von unterschiedlichen Zuckern. Die im Honig enthaltenen können viel besser verdaut werden und geben kurzfristig mehr Energie. Einen weiteren Unterschied? Vergleicht man die selbe Menge Honig und Zucker, dann ist Honig viel süßer. Außerdem sind die Honige von guten Imkern echte Blütensäfte… eine ganz andere Geschichte!

Blütensaft… also hat es einen pflanzlichen Ursprung?

Was denkst du? Hat Honig einen pflanzlichen oder tierischen Ursprung? Auf den ersten Blick könnte man denken er käme von Tieren. Schließlich erhalten wir ihn von Bienen und Bienen sind Tiere. Ja das muss es sein! Wie auch immer, das ist die falsche Antwort. Honig ist ein pflanzliches Produkt… warum? Weil es ursprünglich von Pflanzen stammt! Erinnerst du dich an unseren Artikel Warum sind Bienen so Wichtig? – Gaeblini, in welchem wir darüber sprachen das Bienen von Blüte zu Blüte fliegen und ohne es zu bemerken die Bestäubung übernehmen? Hast du dich je gefragt warum Bienen all diese Blüten besuchen? Wenn die Bestäubung nicht das Ziel ihrer Besuche ist, warum tun sie es dann?

Weil Bienen Nektar von den Blüten sammeln. Nachdem sie genug Blüten besucht haben und ihre ‚Honigtasche‘ voll ist, fliegen sie zurück zu ihren Bienenbeuten. Dort übergeben sie den gesammelten Nektar ihren vertrauenswürdigen Schwestern. Welche sich dann sofort darum kümmern. Der Honig wird in den Zellen der Waben gelagert und reift. Wenn dieser Prozess abgeschlossen ist wird die Zelle mit einer Schicht aus Wachs versiegelt. Verstehst du jetzt warum ich in hier bin ich: Cri, die Imkerin in Ausbildung! – Gaeblini auf die perfekte Organisation in den Bienenbeuten hingewiesen habe? Eine erstaunliche Leistung.

Aber die Bienen arbeiten so hart… und du stielst ihnen den Honig??

Diese war unter den ersten Fragen welche ich Basti je gestellt habe! Um ehrlich zu sein war ich sehr nachdenklich und besorgt. Glücklicherweise gab es dazu keinen Grund. Bienen legen endlose Vorräte an, als ob es keinen Morgen gäbe. Sie sammeln Nektar, arbeiten Hart in der Bienenbeute und sind immer voll der Freude, sie machen einfach immer weiter. Es ist kein Zufall dass sie recht böse werden wenn das Wetter schlechter wird und sie nicht von Blüte zu Blüte fliegen können. 😉 Was das bedeutet? Es bedeutet das der Imker zum richtigen Zeitpunkt den Überschuss erntet. Immer darauf achtend was die Bienen brauchen. Außerdem, denkst du das der Imker glücklich wäre wenn er allen Honig erntet und die Bienen dann verhungern. Zu aller erst ist er immer noch der Bienenhirte, derjenige der die Bienen schützen will.

Verfällt Honig? Wie aufbewahren?

Honig kann eine gute Geschenkidee sein. Glaubst du das auch?

Auch das ist etwas worüber sich viele Menschen wundern… Honig verfällt oder verfällt nicht? Nun, wenn du ein Honigglas in der Hand hältst wirst du ein Mindesthaltbarkeitsdatum (MHD) finden (so muss es sein denn dies gehört zu den vorgeschriebenen Angaben auf einem Honig-Etikett), doch eigentlich verfällt Honig nicht. Warum wird dann das MHD angegeben? Honig ist ein Nahrungsmittel, und die Produzenten müssen ein Datum angeben bis zu dem es verbraucht werden sollte. Es passiert allerdings nichts schlimmes wenn du den ihn nach diesem Datum isst. Keine Sorge, du wirst dich nicht schlecht fühlen. Das MHD wird immer auf ca. eineinhalb oder zwei Jahre nach der Ernte festgelegt. Bis zu diesem Datum verändern sich Aroma und Eigenschaften fast nicht. Danach beginnen diese sich zu verändern und werden langsam zu einer bloßen Zuckersubstanz. Das heißt, Honig wird nicht gefährlich oder gar giftig. Natürlich kommt es auch auf die Lagerung an wie lange er frisch bleibt. Wenn er an einem dunklen, trockenen Platz mit niedrigen Temperaturen gelagert wird gibt es keine Probleme und es kommt auch zu keiner Fermentation.

Die Welt des Honigs mit den Sinnen

Wie du sicherlich verstanden hast gibt es eine ganze zauberhafte Welt über Honig. Die meisten haben eine recht einfache Sichtweise über ihn: golden, ein wenig transparent, sehr süß und flüssig. So stellen wir uns den Honig vor, das ist fast traurig und Zweidimensional. Nichtsdestotrotz gibt es noch so viel mehr außer dieser persönlichen Wahrnehmung. Dabei spreche ich nicht nur von der Farbe, sondern auch der Konsistenz, dem Geruch, dem Aroma und natürlich dem Geschmack. Ein weiterer Grund welcher Honig so besonders macht ist das du wohl nie zwei 100% identische Gläser finden wirst. Das Ergebnis dessen was du in den Gläsern findest hängt immer auch von den besuchten Blüten, wann und wie der Imker den Honig geerntet hat, ja sogar davon wie du den Honig zu Hause lagerst ab. Jedes Mal wenn du ein Glas Honig in Händen hältst kannst du dir sicher sein ein absolutes Einzelstück in Händen zu halten. Hast du es je darüber nachgedacht?
